How To Make Cheesecake Cupcakes

- 8 oz cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/4 cup all-purpose flour
- 1/2 cup graham cracker crumbs
- 2 tbsp melted butter
Instructions

Preheat the oven to 325°F and line a muffin tin with cupcake liners.

In a mixing bowl, beat the cream cheese and sugar until smooth.

Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

Gradually add the flour and mix until just combined.

In a separate bowl, combine the graham cracker crumbs and melted butter until the crumbs are evenly moistened.

Spoon about 1 tablespoon of the graham cracker mixture into the bottom of each cupcake liner and press down to form a crust.

Pour the cheesecake batter evenly into the cupcake liners, filling each about 3/4 full.

Bake for 20-25 minutes, or until the center of each cupcake is set.

Remove from the oven and let cool in the muffin tin for 5 minutes, then transfer to a wire rack to cool completely.

Refrigerate for at least 2 hours before serving.
