How To Make Cherry Cheesecake Cupcakes

- 1 cup graham cracker crumbs
- 2 tbsp melted butter
- 8 oz cream cheese, softened
- 1/4 cup white sugar
- 1 tsp vanilla extract
- 1 egg
- 1/2 cup cherry pie filling
Instructions

Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.

In a small bowl, combine graham cracker crumbs and melted butter. Press mixture into the bottom of each cupcake liner.

In a medium bowl, beat cream cheese, sugar, and vanilla extract until smooth. Add the egg and mix until well combined.

Spoon the cream cheese mixture over the graham cracker crust, filling each cupcake liner about 2/3 full.

Bake for 20-25 minutes, or until the edges are set and the centers are slightly jiggly.

Remove from the oven and let cool in the muffin tin for 10 minutes, then transfer to a wire rack to cool completely.

Once cooled, top each cupcake with a spoonful of cherry pie filling.

Refrigerate for at least 1 hour before serving.
